Ingredients

Dough
  • 2 cups (240 g) all-purpose flour
  • 1/3 cup (65 g) sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (113 g) very cold unsalted butter
  • 1/2 cup (120 ml) cold heavy cream
  • 1 large egg
  • 1 teaspoon vanilla
Finish
  • 1 tablespoon cream
  • 1 tablespoon coarse sugar, optional

Equipment

  • Large baking sheet
  • Digital Kitchen Scale
  • Mixing Bowls
  • Measuring Spoons
  • Silicone Spatula
  • Wire Cooling Rack

Method

  1. Line a baking sheet with parchment. Whisk flour, sugar, baking powder, and salt in a large bowl. Keep the butter and cream cold.
  2. Grate cold butter over the flour or cut it into small cubes. Work in lightly with a pastry blender until visible small flakes remain.
  3. Whisk cream, egg, and vanilla separately. Pour into the flour mixture and stir with a fork until rough moist clumps form.
  4. Turn onto a lightly floured surface and gather gently. Pat into an 8-inch circle about 1 inch thick without kneading smooth.
  5. Cut into eight wedges with a sharp knife and move to the sheet, leaving 2 inches between them. Refrigerate 15 minutes while heating the oven to 400°F (200°C).
  6. Brush tops with the separate tablespoon of cream and sprinkle optional coarse sugar. Avoid flooding the cut edges with liquid.
  7. Bake 18–22 minutes until tops and bases are golden. A split edge should look set rather than wet or doughy.
  8. Cool on a rack for 5–10 minutes and serve warm. Let remaining scones cool fully before enclosing them so trapped steam does not soften every surface.

Notes

  • Yield: 8 scones
  • Oven/heat: 400°F (200°C)
  • Pan/container: Large baking sheet
  • Includes staged baking or stovetop work where applicable; use the texture cues in the method.
  • Times are approximate: cook/bake 20 minutes (approximate); cooling/chilling/resting 20 minutes (approximate; see method); total 1 hour (approximate).
  • Keep visible butter flakes in the dough and handle lightly; warming and kneading it smooth reduces the tender layered texture.
  • Fold in 1/2 cup dried cranberries before adding liquid, or add 1 teaspoon lemon zest for a simple citrus version.
  • Keep airtight at room temperature up to 2 days. Freeze cooled scones up to 2 months; refresh briefly in a 325°F oven.
