Ingredients

Fruit
  • 5 cups (750 g) pitted sweet cherries
  • 1/2 cup (100 g) sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
Topping
  • 1 1/2 cups (180 g) all-purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons (85 g) cold unsalted butter
  • 2/3 cup (160 ml) buttermilk

Equipment

  • 9-inch square baking dish
  • Digital Kitchen Scale
  • Mixing Bowls
  • Pastry Blender
  • Silicone Spatula
  • Wire Cooling Rack

Method

  1. Heat the oven to 375°F (190°C). Butter the dish and put it on a rimmed sheet. Check pitted cherries carefully for missed stones.
  2. Toss cherries with fruit sugar, cornstarch, and lemon juice. Spread evenly in the dish, including any coating left in the mixing bowl.
  3. Whisk topping flour, sugar, baking powder, and salt. Cut in cold butter until small flakes and pea-size pieces remain.
  4. Add buttermilk and stir with a fork until a rough dough forms. Avoid kneading it smooth, which can toughen the biscuits.
  5. Divide dough into eight rough mounds over the fruit. Leave spaces between them so the filling can bubble and the biscuit edges can brown.
  6. Bake 35–45 minutes, until biscuits are golden and a tester in the center of a biscuit shows no raw dough.
  7. Check that fruit juices bubble near the middle. If topping browns too quickly, tent loosely with foil and finish baking.
  8. Let stand 20 minutes before serving. Spoon a biscuit and some thickened cherry filling into each bowl, taking care with the hot fruit juices.

Notes

  • Yield: 8 servings
  • Oven/heat: 375°F (190°C)
  • Pan/container: 9-inch square baking dish
  • Includes staged baking or stovetop work where applicable; use the texture cues in the method.
  • Times are approximate: cook/bake 40 minutes (approximate); cooling/chilling/resting 20 minutes (approximate; see method); total 1 hour 25 minutes (approximate).
  • Check both the biscuit interior and central fruit filling; a browned surface does not guarantee the underside of the topping is cooked.
  • For tart cherries, increase filling sugar to 3/4 cup and keep the fruit weight and cornstarch unchanged.
  • Refrigerate covered up to 4 days. Rewarm in a 325°F oven, loosely covered until heated through.
