Ingredients

Crust
  • 1 1/2 cups (150 g) graham cracker crumbs
  • 6 tablespoons (85 g) unsalted butter, melted
Filling
  • 3/4 cup (150 g) sugar
  • 1/4 cup (22 g) cocoa powder
  • 1/4 cup (32 g) cornstarch
  • 1/4 teaspoon salt
  • 2 1/2 cups (600 ml) whole milk
  • 4 large egg yolks
  • 4 ounces (113 g) semisweet chocolate, chopped
  • 2 tablespoons (28 g) unsalted butter
  • 1 teaspoon vanilla
Topping
  • 1 cup (240 ml) cold heavy cream
  • 2 tablespoons powdered sugar

Equipment

  • 9-inch pie plate
  • Digital Kitchen Scale
  • Rolling Pin
  • Pastry Blender
  • Silicone Spatula
  • Wire Cooling Rack

Method

  1. Heat the oven to 350°F (175°C). Mix graham crumbs and crust butter, press into the base and sides of the pie plate, and bake 10 minutes.
  2. Cool the crust. In a saucepan whisk sugar, cocoa, cornstarch, and salt. Gradually whisk in milk and egg yolks until completely smooth.
  3. Cook over medium heat, whisking constantly across the base and corners, until the mixture thickens and reaches a gentle bubbling boil.
  4. Continue whisking for 1 minute after bubbling begins. Remove from heat and stir in chopped chocolate, filling butter, and vanilla until smooth.
  5. Strain into a bowl if any egg bits remain, then pour into the cooled crust. Smooth the top and press food-safe wrapping directly against the filling.
  6. Cool about 30 minutes, then refrigerate at least 4 hours until fully set. Keep the pie level and leave the covering against the surface.
  7. Whip cold heavy cream and powdered sugar to medium-stiff peaks. Remove the filling cover and spread or pipe the cream over the chilled pie.
  8. Slice with a clean sharp knife, wiping frequently. Keep the pie refrigerated until serving and return remaining portions to the refrigerator promptly.

Notes

  • Yield: 8 slices
  • Oven/heat: 350°F (175°C), plus stovetop
  • Pan/container: 9-inch pie plate
  • Includes staged baking or stovetop work where applicable; use the texture cues in the method.
  • Times are approximate: cook/bake 15 minutes (approximate); cooling/chilling/resting 4 hours 30 minutes (approximate; see method); total 5 hours 15 minutes (approximate).
  • Whisk continuously once the pan is on the heat; starch settles quickly and can scorch at the bottom before the top appears thick.
  • Use chocolate wafer crumbs instead of graham crumbs in the same weight for a deeper chocolate crust.
  • Refrigerate covered up to 3 days. Add whipped cream close to serving when possible; freezing can change the pudding texture.
  • Nutrition values are not provided; no calculated nutrition data is included.
