Ingredients

Fruit
  • 3 large ripe but firm bananas
Coating
  • 8 ounces (227 g) semisweet chocolate, chopped
  • 1 tablespoon coconut oil
Finish
  • 2 tablespoons finely chopped nuts or shredded coconut, optional

Equipment

  • Parchment-lined freezer-safe tray
  • Digital Kitchen Scale
  • Mixing Bowls
  • Silicone Spatula
  • Freezer Safe Containers
  • Digital Kitchen Timer

Method

  1. Line a tray with parchment and make room for it in the freezer. Peel bananas and cut into rounds about 1/2 inch thick.
  2. Arrange rounds in a single layer without touching. Freeze for at least 1 hour, until firm enough to lift and dip without bending.
  3. Melt chocolate and coconut oil in a dry microwave-safe bowl in 20-second bursts, stirring between each until smooth.
  4. Let the chocolate cool slightly while remaining fluid. Set optional chopped nuts or coconut nearby before taking the bananas from the freezer.
  5. Working with a few rounds at a time, lower each into chocolate using a fork. Lift, let excess drip away, and slide onto the lined tray.
  6. Sprinkle optional topping immediately, before the cold fruit makes the chocolate set. Return completed bites to the freezer while coating the next group.
  7. Freeze the coated bites for at least 2 hours until firm. Transfer to a sealed container with parchment between layers once the shells are fully set.
  8. Let portions stand 2–3 minutes before eating if very hard. Serve only what you need and keep the rest frozen to protect the chocolate shell.

Notes

  • Yield: About 36 bites
  • Oven/heat: Microwave for chocolate, then freezer
  • Pan/container: Parchment-lined freezer-safe tray
  • Cooking time excludes chilling, churning, and freezing. Prepare an ice cream maker in advance only when the method requires one; manufacturer bowl-freezing time is additional.
  • Times are approximate: cook/bake 5 minutes (approximate); cooling/chilling/resting 3 hours (approximate; see method); total 3 hours 25 minutes (approximate).
  • Keep the chocolate bowl and utensils dry; even a little stray water can make melted chocolate seize into a thick paste.
  • Use dark chocolate instead of semisweet, keeping the coating weight and coconut oil quantity the same.
  • Freeze in a sealed container up to 1 month. Avoid thawing the entire batch, since thawed bananas soften and release moisture.
