Ingredients

Custard
  • 1 1/2 cups (360 ml) heavy cream
  • 1/2 cup (120 ml) whole milk
  • 5 ounces (142 g) semisweet chocolate, finely chopped
  • 4 large egg yolks
  • 1/4 cup (50 g) sugar
  • 1 teaspoon vanilla
  • Pinch of salt

Equipment

  • Six 4-ounce oven-safe ramekins and roasting pan
  • Digital Kitchen Scale
  • Mixing Bowls
  • Balloon Whisk
  • Silicone Spatula
  • Fine Mesh Sieve

Method

  1. Heat the oven to 300°F (150°C). Arrange ramekins in a roasting pan. Warm cream and milk in a saucepan until steaming, without a hard boil.
  2. Remove from heat and add chopped chocolate. Wait 2 minutes, then stir until the mixture is smooth and all chocolate pieces have melted.
  3. Whisk egg yolks, sugar, vanilla, and salt gently in a bowl. Gradually whisk in the warm chocolate cream in a thin stream.
  4. Strain the custard into a pouring jug to catch any egg strands. Divide evenly between ramekins, leaving room at the top.
  5. Place the roasting pan on the oven rack and carefully add hot water halfway up the ramekin sides. Keep water out of the chocolate mixture.
  6. Bake 30–40 minutes, until edges are set and centers tremble gently. A thermometer in the center should read around 170–175°F (77–79°C).
  7. Remove ramekins carefully from the hot water and cool on a rack about 15 minutes. Refrigerate at least 4 hours until fully chilled.
  8. Serve directly in the ramekins, optionally with a little whipped cream. Keep portions modest and return unused custards to the refrigerator promptly.

Notes

  • Yield: 6 servings
  • Oven/heat: 300°F (150°C)
  • Pan/container: Six 4-ounce oven-safe ramekins and roasting pan
  • Includes staged baking or stovetop work where applicable; use the texture cues in the method.
  • Times are approximate: cook/bake 35 minutes (approximate); cooling/chilling/resting 4 hours 15 minutes (approximate; see method); total 5 hours 10 minutes (approximate).
  • Use gentle heat and stop with a small central wobble; baking until completely firm can make the egg custard grainy.
  • Add 1/2 teaspoon espresso powder to the warm cream for a light coffee accent.
  • Refrigerate covered up to 3 days. Add whipped cream only near serving; freezing may alter the custard texture.
  • Nutrition values are not provided; no calculated nutrition data is included.
