Ingredients

Brownie
  • 1/2 cup (113 g) unsalted butter
  • 4 ounces (113 g) semisweet chocolate
  • 3/4 cup (150 g) sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/2 cup (60 g) all-purpose flour
  • 1/4 cup (22 g) cocoa
  • 1/4 teaspoon salt
Swirl
  • 8 ounces (226 g) block cream cheese, softened
  • 1/4 cup (50 g) sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla

Equipment

  • 8-inch square metal pan
  • Digital Kitchen Scale
  • Mixing Bowls
  • Silicone Spatula
  • Parchment Paper
  • Sharp Kitchen Knife

Method

  1. Heat the oven to 350°F (175°C). Line the pan with parchment and grease lightly. Bring cream cheese to a soft, mixable texture.
  2. Melt butter and chocolate together gently, stirring until smooth. Cool for 5 minutes before whisking in brownie sugar, eggs, and vanilla.
  3. Fold flour, cocoa, and salt into the chocolate mixture. Reserve 1/4 cup of this brownie batter in a small bowl.
  4. Beat cream cheese and swirl sugar until smooth. Mix in the egg yolk and vanilla just until the mixture is evenly combined.
  5. Spread the main brownie batter in the pan. Spoon cream cheese mixture over it, then dot with the reserved brownie batter.
  6. Draw a knife through the layers in a few broad curves. Bake 32–38 minutes, until the cream cheese is set and a tester has moist crumbs.
  7. Cool for 1 hour on a rack, then refrigerate at least 90 minutes. Chilling firms both layers and makes the marble pattern easier to slice.
  8. Lift out and cut into 16 squares with a wiped knife. Return unused portions to the refrigerator after serving.

Notes

  • Yield: 16 squares
  • Oven/heat: 350°F (175°C)
  • Pan/container: 8-inch square metal pan
  • Includes staged baking or stovetop work where applicable; use the texture cues in the method.
  • Times are approximate: cook/bake 35 minutes (approximate); cooling/chilling/resting 2 hours 30 minutes (approximate; see method); total 3 hours 30 minutes (approximate).
  • Keep the knife movements broad and few; excessive swirling blends the layers and hides the cream cheese pattern.
  • Add 1 teaspoon orange zest to the cream cheese mixture for a gentle citrus accent.
  • Refrigerate covered up to 4 days. Freeze separated squares for up to 2 months, then thaw overnight in the refrigerator.
