Ingredients

Fruit
  • 5 cups (750 g) blueberries
  • 1/3 cup (65 g) sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
Topping
  • 1 1/2 cups (180 g) all-purpose flour
  • 1/4 cup (50 g) sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons (85 g) cold unsalted butter
  • 3/4 cup (180 ml) whole milk
  • 1 teaspoon lemon zest

Equipment

  • 9-inch square baking dish
  • Digital Kitchen Scale
  • Mixing Bowls
  • Pastry Blender
  • Silicone Spatula
  • Wire Cooling Rack

Method

  1. Heat the oven to 375°F (190°C). Butter the dish and place it on a rimmed baking sheet. Remove stems from the blueberries.
  2. Combine fruit sugar and cornstarch, then toss with blueberries and lemon juice. Spread evenly over the base of the dish.
  3. Whisk topping flour, sugar, baking powder, and salt. Cut cold butter into the mixture until pea-size pieces remain.
  4. Add milk and lemon zest. Stir just until a rough, thick dough forms without beating it smooth or working it for a long time.
  5. Drop dough in eight mounds over the berries, leaving narrow gaps between them so you can see the filling as it cooks.
  6. Bake 35–45 minutes, until topping is golden and a tester in a central mound shows no wet dough. Fruit should bubble near the center.
  7. If topping is browned before the filling bubbles, cover loosely with foil and continue baking. Avoid serving with raw dough underneath the mounds.
  8. Rest 20 minutes before spooning into bowls. Include topping and fruit in each portion, letting the thickened blueberry juices settle around the biscuit.

Notes

  • Yield: 8 servings
  • Oven/heat: 375°F (190°C)
  • Pan/container: 9-inch square baking dish
  • Includes staged baking or stovetop work where applicable; use the texture cues in the method.
  • Times are approximate: cook/bake 40 minutes (approximate); cooling/chilling/resting 20 minutes (approximate; see method); total 1 hour 15 minutes (approximate).
  • Check beneath a central biscuit mound for cooked dough, not just a golden upper surface.
  • Use frozen blueberries straight from the freezer; allow extra baking time and rely on the center bubbling cue.
  • Refrigerate covered up to 4 days. Reheat in a 325°F oven until warmed through, shielding the top if needed.
