Ingredients

Layers
  • 18 full graham cracker sheets, about 280 g
  • 1 1/2 pounds (680 g) strawberries, hulled and sliced
Cream
  • 2 cups (480 ml) cold heavy whipping cream
  • 1/3 cup (40 g) powdered sugar
  • 2 teaspoons vanilla extract

Equipment

  • 8-inch square baking dish
  • Digital Kitchen Scale
  • Mixing Bowls
  • Silicone Spatula
  • Measuring Spoons
  • Offset Spatula

Method

  1. Prepare the berries. Wash strawberries, dry them thoroughly, remove the stems, and cut into thin even slices. Reserve a few for the top.
  2. Chill a mixing bowl and beaters briefly. Add cold heavy cream, powdered sugar, and vanilla, then beat until medium-stiff peaks hold.
  3. Spread a thin layer of whipped cream across the base of the dish. This helps the first crackers stay in place during assembly.
  4. Arrange one layer of graham crackers over the cream, breaking pieces to fit. Spread with one-third of the remaining cream and a layer of strawberries.
  5. Repeat the crackers, cream, and strawberries twice more. Use roughly equal portions so every slice contains a balanced set of layers.
  6. Cover without pressing the wrapping into the topping. Refrigerate for at least 6 hours, preferably overnight, until the crackers soften completely.
  7. Check a corner with a thin knife; it should pass through the cracker layers with little resistance. Keep the cake chilled until serving.
  8. Add reserved berries shortly before serving. Cut into squares with a sharp knife and lift portions with a broad spatula.

Notes

  • Yield: 9 servings
  • Oven/heat: No oven needed
  • Pan/container: 8-inch square baking dish
  • No cooking required.
  • Times are approximate: cook/bake 0 minutes (approximate); cooling/chilling/resting 6 hours (approximate; see method); total 6 hours 25 minutes (approximate).
  • Dry the berries well before layering; excess surface water can make the cream loose and the bottom soggy.
  • Replace one-third of the strawberries with sliced raspberries for a mixed-berry version.
  • Refrigerate covered and eat within 2 days for the best texture. Keep chilled until serving; freezing can make the fresh berries watery.
