Total Time 6 hours 15 minutes
Servings: 8 popsicles
Course: Frozen Dessert
Cuisine: American

Ingredients

Base
  • 2 cups (300 g) hulled strawberries
  • 1 cup (150 g) peeled ripe mango chunks
  • 1/2 cup (120 ml) orange juice
  • 2 tablespoons honey or granulated sugar
  • 1 tablespoon lime juice

Equipment

  • Eight 2 1/2-ounce popsicle molds and sticks
  • Digital Kitchen Scale
  • Mixing Bowls
  • Silicone Spatula
  • Freezer Safe Containers
  • Digital Kitchen Timer

Method

  1. Wash and prepare the fruit, removing strawberry stems and all mango peel and stone. Choose ripe fruit for a smoother, naturally sweeter puree.
  2. Place strawberries, mango, orange juice, sweetener, and lime juice in a blender. Blend until smooth, stopping to scrape the sides as needed.
  3. Taste the puree with a clean spoon. Keep in mind that sweetness becomes less pronounced when frozen; dissolve any small adjustment before filling molds.
  4. If you prefer a smoother finish, strain the puree through a fine sieve. This is optional and removes some strawberry seeds and fruit fiber.
  5. Pour into molds, leaving about 1/4 inch at the top for expansion. Tap the molds gently to release large trapped air pockets.
  6. Fit the lids and insert sticks according to the mold design. Keep the molds upright on a level freezer shelf.
  7. Freeze at least 6 hours, or until solid throughout. Thicker molds can need longer than small narrow ones, so check before attempting to unmold.
  8. Run the outside briefly under lukewarm water if necessary, then release gently. Serve immediately or wrap pops individually and return them to the freezer.

Notes

  • Yield: 8 popsicles, about 2 1/2 ounces each
  • Oven/heat: Freezer only
  • Pan/container: Eight 2 1/2-ounce popsicle molds and sticks
  • Cooking time excludes chilling, churning, and freezing. Prepare an ice cream maker in advance only when the method requires one; manufacturer bowl-freezing time is additional.
  • Times are approximate: cook/bake 0 minutes (approximate); cooling/chilling/resting 6 hours (approximate; see method); total 6 hours 15 minutes (approximate).
  • Leave a little space at the top of every mold because the fruit mixture expands as it freezes.
  • Use pineapple instead of mango in the same weight, blending thoroughly to break down the fibers.
  • Freeze tightly covered up to 1 month. Once unmolded, wrap individually to reduce freezer odors and surface ice.
  • Nutrition values are not provided; no calculated nutrition data is included.
