Ingredients

Batter
  • 1 3/4 cups (210 g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons poppy seeds
  • 3/4 cup (150 g) sugar
  • 2 tablespoons lemon zest
  • 1/2 cup (113 g) unsalted butter, softened
  • 2 large eggs
  • 1/2 cup (120 g) sour cream
  • 1/4 cup (60 ml) whole milk
  • 2 tablespoons lemon juice
Glaze
  • 1 cup (120 g) powdered sugar
  • 1–2 tablespoons lemon juice

Equipment

  • 9 x 5-inch loaf pan
  • Digital Kitchen Scale
  • Mixing Bowls
  • Electric Hand Mixer
  • Silicone Spatula
  • Wire Cooling Rack

Method

  1. Heat the oven to 350°F (175°C). Grease the loaf pan and fit a parchment sling. Whisk flour, baking powder, baking soda, salt, and poppy seeds.
  2. Rub lemon zest into granulated sugar until fragrant. Beat with softened butter for 3 minutes, scraping the bowl, until light and creamy.
  3. Beat in eggs one at a time. Mix sour cream, milk, and batter lemon juice in a separate small bowl.
  4. Add dry ingredients in three portions, alternating with the sour cream mixture. Mix on low just until combined, avoiding prolonged beating.
  5. Spread batter evenly in the pan. Bake 50–60 minutes until a center skewer shows no wet batter and the top springs back gently.
  6. If the loaf colors early, tent loosely with foil. Cool in the pan 15 minutes, then lift onto a rack and let cool completely.
  7. Whisk powdered sugar with 1 tablespoon glaze lemon juice. Add the second tablespoon gradually until thick but pourable, rather than thin and watery.
  8. Drizzle over the cool loaf and let settle before cutting. Use a serrated knife for even slices and keep the cut end covered during storage.

Notes

  • Yield: 10 slices
  • Oven/heat: 350°F (175°C)
  • Pan/container: 9 x 5-inch loaf pan
  • Includes staged baking or stovetop work where applicable; use the texture cues in the method.
  • Times are approximate: cook/bake 55 minutes (approximate); cooling/chilling/resting 1 hour 15 minutes (approximate; see method); total 2 hours 30 minutes (approximate).
  • Cool the loaf before glazing; a warm surface makes the glaze soak in instead of forming a visible drizzle.
  • Use orange zest and orange juice in the same quantities for an orange-poppy seed version.
  • Keep covered at cool room temperature up to 2 days or refrigerate up to 5 days. Freeze unglazed slices up to 2 months.
