Ingredients

Syrup
  • 2 cups (480 ml) water
  • 1 1/4 cups (250 g) sugar
  • Zest of 2 lemons, in wide strips
Finish
  • 1 cup (240 ml) fresh lemon juice, strained
  • Pinch of salt

Equipment

  • Ice cream maker and freezer-safe container
  • Digital Kitchen Scale
  • Mixing Bowls
  • Silicone Spatula
  • Freezer Safe Containers
  • Digital Kitchen Timer

Method

  1. Check the ice cream maker instructions and freeze its bowl in advance if required. Set out a freezer-safe storage container.
  2. Combine water, sugar, and lemon zest strips in a saucepan. Heat gently, stirring until sugar dissolves, then simmer for 1 minute.
  3. Remove from heat and steep 15 minutes. Strain out the zest strips, avoiding bitter white pith when preparing them.
  4. Stir lemon juice and salt into the syrup. Cool over an ice-water bath, then refrigerate at least 4 hours until completely cold.
  5. Pour the chilled mixture into the prepared ice cream maker and churn according to its instructions, usually 20–30 minutes.
  6. The churned sorbet should look thick and slushy rather than liquid. Transfer immediately to the chilled storage container and smooth the top.
  7. Cover tightly and freeze at least 4 hours for a firmer scoopable texture. Keep the container level and avoid opening repeatedly while it sets.
  8. Let stand 5–10 minutes before scooping if very firm. Serve in small chilled bowls and return the container to the freezer promptly.

Notes

  • Yield: About 1 quart, 8 servings
  • Oven/heat: Stovetop, ice cream maker, and freezer
  • Pan/container: Ice cream maker and freezer-safe container
  • Cooking time excludes chilling, churning, and freezing. Prepare an ice cream maker in advance only when the method requires one; manufacturer bowl-freezing time is additional.
  • Times are approximate: cook/bake 5 minutes (approximate); cooling/chilling/resting 9 hours 15 minutes (approximate; see method); total 9 hours 35 minutes (approximate).
  • Keep the measured sugar quantity for the first batch; sugar affects softness as well as sweetness in a frozen dessert.
  • Replace 1/4 cup lemon juice with lime juice for a mixed-citrus sorbet without changing the total juice amount.
  • Freeze tightly covered up to 2 weeks for the best texture. Sorbet becomes firmer over time; soften briefly before scooping.
