Ingredients

Fruit
  • 1 pound (454 g) strawberries, hulled and chopped
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
Base
  • One 14-ounce (397 g) can sweetened condensed milk
  • 2 cups (480 ml) cold heavy whipping cream
  • 1 teaspoon vanilla
  • Pinch of salt

Equipment

  • 9 x 5-inch metal loaf pan or freezer container
  • Digital Kitchen Scale
  • Mixing Bowls
  • Silicone Spatula
  • Freezer Safe Containers
  • Digital Kitchen Timer

Method

  1. Combine strawberries, sugar, and lemon juice in a saucepan. Simmer 10–15 minutes, stirring and mashing, until reduced to about 3/4 cup of thick puree.
  2. Transfer puree to a shallow bowl and refrigerate until completely cold, about 1 hour. Do not mix warm fruit into whipped cream.
  3. Stir condensed milk, vanilla, salt, and the cold strawberry puree together in a large bowl. Make sure the fruit is evenly dispersed.
  4. Whip cold heavy cream in a separate chilled bowl to stiff peaks, stopping before it becomes grainy or begins turning to butter.
  5. Fold one-third of the cream into the strawberry mixture to lighten it. Gently fold in the rest until no white streaks remain.
  6. Scrape into a freezer-safe loaf pan or container and level gently. Press food-safe wrapping onto the surface and cover tightly.
  7. Freeze at least 6 hours, preferably overnight, until firm enough to scoop. Keep the container flat while the mixture freezes.
  8. Soften briefly at room temperature before serving. Scoop with a sturdy ice cream scoop and return remaining ice cream to the freezer promptly.

Notes

  • Yield: About 1 1/2 quarts, 10 servings
  • Oven/heat: Stovetop for fruit, then freezer
  • Pan/container: 9 x 5-inch metal loaf pan or freezer container
  • Cooking time excludes chilling, churning, and freezing. Prepare an ice cream maker in advance only when the method requires one; manufacturer bowl-freezing time is additional.
  • Times are approximate: cook/bake 12 minutes (approximate); cooling/chilling/resting 7 hours (approximate; see method); total 7 hours 37 minutes (approximate).
  • Reduce the berries to a thick puree and chill fully; raw watery fruit can leave icy pockets in the finished ice cream.
  • Replace one-quarter of the strawberries with raspberries, straining seeds if desired after reducing the fruit.
  • Freeze tightly covered up to 2 weeks for the best texture. Let only the serving portion soften rather than melting the whole container.
  • Nutrition values are not provided; no calculated nutrition data is included.
