Ingredients

Pudding
  • 3/4 cup (150 g) sugar
  • 1/4 cup (32 g) cornstarch
  • 1/4 teaspoon salt
  • 3 cups (720 ml) whole milk
  • 3 large egg yolks
  • 2 tablespoons (28 g) unsalted butter
  • 2 teaspoons vanilla
Layers
  • 6 ounces (170 g) vanilla wafers
  • 4 ripe but firm bananas, sliced
Topping
  • 1 cup (240 ml) cold heavy cream
  • 2 tablespoons powdered sugar

Equipment

  • 2-quart serving dish
  • Digital Kitchen Scale
  • Mixing Bowls
  • Balloon Whisk
  • Silicone Spatula
  • Fine Mesh Sieve

Method

  1. Whisk sugar, cornstarch, and salt in a saucepan. Gradually whisk in milk and egg yolks until smooth, checking that no dry starch remains.
  2. Cook over medium heat, whisking continuously across the base and corners, until the pudding thickens and begins to bubble gently.
  3. Keep whisking for 1 minute once bubbling begins. Remove from heat, stir in butter and vanilla, and cover the surface directly with food-safe wrapping.
  4. Cool the pudding for about 20 minutes, stirring once to release heat. Slice bananas shortly before assembling to reduce browning.
  5. Spread a little pudding in the serving dish. Add half the wafers, half the banana slices, and half the remaining pudding.
  6. Repeat with the rest of the wafers, bananas, and pudding. Cover and refrigerate at least 3 hours, allowing the wafers to soften.
  7. Whip cold cream and powdered sugar to medium-stiff peaks. Spread over the chilled pudding just before serving, keeping the layers beneath undisturbed.
  8. Spoon into bowls with a broad serving spoon. Return unused pudding to the refrigerator promptly, keeping fresh banana slices beneath the pudding where possible.

Notes

  • Yield: 8 servings
  • Oven/heat: Stovetop only
  • Pan/container: 2-quart serving dish
  • Includes staged baking or stovetop work where applicable; use the texture cues in the method.
  • Times are approximate: cook/bake 10 minutes (approximate); cooling/chilling/resting 4 hours (approximate; see method); total 4 hours 35 minutes (approximate).
  • Use ripe but firm bananas; very soft fruit turns mushy during the long refrigerator rest.
  • Use shortbread pieces instead of vanilla wafers, allowing extra chilling if the cookies are particularly thick.
  • Refrigerate covered up to 2 days. Bananas darken with time, so this dessert is best assembled the day before serving or sooner.
