Ingredients

Crust
  • 1 1/2 cups (150 g) graham cracker crumbs
  • 5 tablespoons (71 g) unsalted butter, melted
Sauce
  • 1 1/2 cups (190 g) raspberries
  • 3 tablespoons sugar
  • 1 teaspoon cornstarch
  • 1 tablespoon water
Filling
  • 24 ounces (678 g) block cream cheese, softened
  • 1 cup (200 g) sugar
  • 3/4 cup (180 g) sour cream
  • 2 teaspoons vanilla
  • 3 large eggs

Equipment

  • 9-inch springform pan
  • Digital Kitchen Scale
  • Electric Hand Mixer
  • Silicone Spatula
  • Mixing Bowls
  • Offset Spatula

Method

  1. Heat the oven to 325°F (165°C). Mix graham crumbs and butter, press into the base of a greased springform pan, and bake 10 minutes.
  2. Simmer raspberries and sauce sugar for 3 minutes. Stir in cornstarch mixed with water; simmer 1 minute, strain out seeds, and cool.
  3. Place a roasting pan of hot water on the lower rack. Beat cream cheese and filling sugar on low until smooth, scraping thoroughly.
  4. Mix in sour cream and vanilla, then add eggs one at a time without overbeating. Spread half the filling over the crust.
  5. Dot with half the cooled sauce, add remaining filling, then dot with remaining sauce. Swirl gently with a skewer in a few broad curves.
  6. Bake above the water pan for 65–80 minutes, until the edges are set and the center has a small gentle wobble.
  7. Turn off the oven and leave the door slightly open for 1 hour. Cool on a rack 1 hour, then chill at least 6 hours.
  8. Run a knife around the edge and release the ring. Slice cold with a warm dry blade, wiping after each cut to show the swirls clearly.

Notes

  • Yield: 12 slices
  • Oven/heat: 325°F (165°C)
  • Pan/container: 9-inch springform pan
  • Includes staged baking or stovetop work where applicable; use the texture cues in the method.
  • Times are approximate: cook/bake 1 hour 25 minutes (approximate); cooling/chilling/resting 8 hours (approximate; see method); total 10 hours (approximate).
  • Cool the strained raspberry sauce before swirling; hot sauce can soften the filling and make the pattern spread.
  • Use the same weight of blackberries for the sauce, straining carefully to remove their larger seeds.
  • Refrigerate covered up to 5 days. Freeze wrapped slices up to 2 months; thaw in the refrigerator and keep chilled until serving.
