Prep Time 30 minutes
Cook Time 1 hour 10 minutes
Cooling/chilling/resting 5 hours 20 minutes
Total Time 7 hours
Servings: 8 slices
Course: Pie
Cuisine: American

Ingredients

Pastry
  • 1 1/4 cups (150 g) all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (113 g) cold unsalted butter
  • 3–4 tablespoons ice water
Filling
  • One 15-ounce (425 g) can plain pumpkin puree
  • 3/4 cup (150 g) brown sugar
  • 2 large eggs
  • One 12-fluid-ounce (354 ml) can evaporated milk
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

Equipment

  • 9-inch pie plate
  • Digital Kitchen Scale
  • Rolling Pin
  • Pastry Blender
  • Silicone Spatula
  • Wire Cooling Rack

Method

  1. Mix pastry flour and salt, cut in cold butter, and add ice water gradually until dough holds together. Wrap a flattened disc and chill 1 hour.
  2. Roll into a 12-inch circle, fit into the pie plate, and crimp. Chill 20 minutes while heating the oven to 375°F (190°C).
  3. Line the shell with parchment and fill with pie weights. Bake 15 minutes, remove weights and paper, then bake 5 minutes more.
  4. Reduce heat to 350°F (175°C). Whisk pumpkin, brown sugar, eggs, evaporated milk, spice, salt, and vanilla gently until smooth.
  5. Pour filling into the warm shell. Bake on a rimmed sheet for 45–55 minutes, shielding the edge if it begins to brown too much.
  6. The outer filling should be set while a small central circle jiggles gently. A thermometer near the center should reach about 175°F (79°C).
  7. Cool on a rack for about 2 hours, then refrigerate at least 2 hours before serving. Do not leave the custard pie out overnight.
  8. Cut chilled slices with a clean sharp knife. Add whipped cream at the table rather than covering the whole pie during storage.
